Healthy Breakfast Oat Muffins


Makes 11 muffins
Prep time: 10 mins
Cook time: 11-13 mins
Calories per muffin: ~110

Preheat oven to 425 degrees; spray muffin tin with nonstick baking spray

Ingredients

  • 1 1/2 c Quick cook oats
  • 1/2 c Flour
  • 1 tsp Baking powder
  • 1 tsp Cinnamon
  • 1/2 tsp Salt
  • 1 large Egg
  • 1 medium Banana (firm)
  • 2 big squeezes (~1/4 c) Honey
  • 2 heaping tbsp Coconut oil
  • Just less than 1 c Milk, room temperature 

Instructions
  1. Mix together the dry ingredients
  2. Add the chopped banana to the dry ingredients, and coat completely
  3. Combine wet ingredients, and fold into dry ingredients
  4. Spoon mixture into muffin tin filling each about halfway
  5. Cook at 425 degrees for 13-15 minutes
