Preheat oven to 425 degrees; spray muffin tin with nonstick baking spray
Ingredients
- 1 1/2 c Quick cook oats
- 1/2 c Flour
- 1 tsp Baking powder
- 1 tsp Cinnamon
- 1/2 tsp Salt
- 1 large Egg
- 1 medium Banana (firm)
- 2 big squeezes (~1/4 c) Honey
- 2 heaping tbsp Coconut oil
- Just less than 1 c Milk, room temperature
Instructions
- Mix together the dry ingredients
- Add the chopped banana to the dry ingredients, and coat completely
- Combine wet ingredients, and fold into dry ingredients
- Spoon mixture into muffin tin filling each about halfway
- Cook at 425 degrees for 13-15 minutes
