1lb-1.5lbs ground lean turkey
1 medium onion, finely diced (or grated)
1/4 c dried cranberries, finely chopped
1/4 c oats
1 palmful curry powder
1/2 palmful dried parsley
red pepper flakes
salt
pepper
1 egg
1 tsp olive oil
mix all ingredients together, and roll meat mixture into meatballs. bake at 375 degrees for 40 min, turning halfway through.
*note: i suggest making the meatballs in advance because they taste better after sitting a day. also, if you don't like 'chunky' meatballs, put the onion and cranberries in a food processor.

the 2nd time i made these, i added almonds (about a handful) and 2 tbs of ketchup. in the food processor, i chopped together: onion, cranberries, almonds, ketchup, garlic, and oats. then, i added this to the meat with the rest of the ingredients. i added about 1/4 c oats to the mixture to get the consistency i wanted. these were delicious. i strongly recommend the almonds.
